A dinner for busy families

I have been writing this blog for about eight months now. After about 340 blogs, I have writer's block. Not too bad really. Part of it I’m sure has to do with my mood.

Since nothing really appeals to me on the foster care or adoption front right now, I’ll deal with the fact that we’re all busy and serving your kids a nutritious meal that they actually like can be nearly impossible. This is a quick and easy meal that gets rave reviews at my house.

Crock Pot Chicken Tortilla Soup


  • One 15 oz can of tomatoes (don't drain the juice off)


  • One 32 oz carton of chicken stock or broth


  • One jar salsa


  • One package frozen corn


  • Two chicken breasts, cooked and cut into bite size pieces


  • One can of black beans (I consider this optional because I don’t like beans)


  • One package of tortilla chips


  • SPONSOR





Now, here’s the really tough part.

Dump it all into your slow cooker or crock pot (depending on what you call it) and put it on low and let it go for eight hours. If you need it faster, put it on medium for four hours.

Spoon soup into a bowl and add tortilla chips on top. If you want you can add shredded cheese, sour cream, guacamole, black olives, or whatever else you like.

If you want things spicier, use the hot salsa and tomatoes with jalapeños in them, or throw some jalapeños or cayenne pepper in.

I made this when we went camping with a group and it was a hit with everyone. Serve it up with some good bread and you’re all set.

If you’re doing the gluten free and casein free diet this fits the menu very easily if you check your chicken stock and leave out the “toppings”.

With most of the country starting to head into fall and some cooler weather, this makes a great meal.

The recipe sounds yummy! I will have to double it though, as my twin tweenagers have huge appetites and hollow legs....
